E pluribus unum
The quest for balance
The diversity of the soils is enhanced by pursuing balance as a path between verticality and sapidity. “A unique idea expressed by infinite diversity”, this is the synthesis that describes and condenses the essence of Disìo.

The Pinot Noir grapes, strictly harvested by hand, are transported to the cellar in small perforated baskets to preserve the total berry integrity. The yield of each terrace undergoes separate pressing and vinification, following the physiological ripening of the vintage. Whole bunches arriving at the winery are gradually pressed, fractioning the musts and separating the free-run juice from second pressings for each estate cru.
The free-run must and the press must are then allowed to rest by gravity settling in temperature-controlled stainless steel tanks, followed by sediment separation and temperature-regulated fermentation.
Vinification takes place both in stainless steel and in French oak barriques, with aging periods tailored to the specific characteristics of the vintage. It is here that the Spagnolli vision comes to fruition: each vineyard plot is accompanied throughout its aging by the Professor, whose vast experience guides the optimal procedure year after year.
A prolonged aging on the fine lees follows for 8 months, during which periodic bâtonnage is carried out. The portion of wine aged in wood also undergoes malolactic fermentation, usually involving 30% of the cuvée.
In late spring, the blending of the various parcels is conducted with the precise goal of highlighting the distinctive identity of each calcareous steep slope.
Following a slow secondary bottle fermentation, the wine rests on its lees for over 40 months, followed by a delicate dosage of 3.5 g/l of sugar and further cellar rest according to requirements. The liqueur d’expédition is prepared using the cellar’s reserve wines, preserved year after year according to the perpetual reserve method, endowing the wine with the personal and unmistakable signature of its native terroir.
WHAT DOES THE NAME
DISÌO STAND FOR?
WHAT DOES THE NAME DISÌO STAND FOR?
Tasting Notes

SIGHT
Straw yellow with lemon-colored reflections. Its fine mountain perlage, dense and delicate, enriches the glass with brilliant reflections.

NOSE
On the nose, the aroma is immediately revealed in a decisive way and, after a few instants, the nose reveals delicious hints of ripe fruit. Quince, pomegranate and Mediterranean citrus fruits alternate with the most articulated notes of pastry, which require time and oxygen to fully express themselves.

TASTE
The entry into the mouth is decisive, clear. The acidity provides a counterpoint to the strong sapidity, typical of mountain sparkling wine. Its fine bubble softens its expression, lengthening the persistence on the palate. The finish allows to fully enjoy the structure of Disìo, and its texture of delicate Chantilly cream enriches the taste experience.
RECOMMENDED SERVING TEMPERATURE: 8°C
Pairings
Disìo may easily match a whole meal experience, by virtue of its complex structure, its great persistence and its fresh flavour.
It pairs best with raw seafood and medium-aged cheeses.
